City of Lethbridge celebrates Waste Reduction Week with leftovers challenge

LETHBRIDGE, AB – This week is Waste Reduction Week.

The City of Lethbridge is one of many cities across the country recognizing the initiative.

Tonight, October 19, City Hall will glow green and blue to kickstart the week, which raises awareness around waste reduction.

Each day this week will feature a different theme, including textiles, electronics, plastics, food waste, swapping, repairing and the circular economy.

The City of Lethbridge will focus specifically on reducing food waste this year, and noted that about one fifth of all groceries end up in the landfill before ever making it to dinner tables.

“Residents will be challenged to change that figure, and will be able to do so via a fun social media challenge,” the city stated in a release Monday morning.

Residents are encouraged to share their go-to recipes, tips and tricks to use their leftovers. The campaign is branded as the #LethbridgeLovesLeftovers challenge.

All participants will be entered in to win a cooking class at Lethbridge College.

The city will also compile all the recipes shared to create a ‘made in Lethbridge’ recipe book once the challenge has come to an end.

#LethbridgeLovesLeftovers will run from October 19 to October 25, with winners draw on October 26.
