VIA CIBO – Italian street food: a mouth-watering upgrade from usual fast food

It isn’t unusual for restaurants to come and go in any city. However, the good ones, the really good ones – they have staying power. Fortunately, Lethbridge has several of those and the newest expected to make its mark is Via Cibo (pron: VEE ah – CHEE bo).

Via Cibo opened in February to offer Lethbridge residents authentic Italian “street food” which is the meaning of ‘Via Cibo’.

Street food, or fast food in Italy, is a far cry from the type of fast food most north Americans are accustomed to.

In Italy, restaurant doors and kitchens are usually open to the street, offering a welcome environment for those looking for a fast, casual meal, that they can enjoy at their leisure. But, while the offerings may be fast and casual, there is never a lack of quality in the food items, or the passion in which it is made.

Italian street food rivals North American fine dining, with made-from scratch offerings using fresh, flavourful ingredients – the equivalent of what an Italian grandmother would serve to her family. Everything from piadina, to pasta and pizza and stacked prosciutto salad.

At Via Cibo, food quality is the primary objective and with the kitchen open to the dining room, patrons can see for themselves the delicious ingredients and preparation that goes into their meal. The staff accomplishes the preparation, without having their customers enduring an extensive wait.

Via Chibo’s General Manager, Evan Shea, has been managing restaurants in Lethbridge for 15 years and there’s a reason for his longevity in the hospitality industry.

“My passion has always been about food and people and being able to bring that all together is what really makes operating a restaurant a rewarding experience.”
